With this fantastic Summer weather that we’ve been having my ( small ) veggie patch is going really well and we’ve had a great harvest of fresh peas, although I have to say they don’t ever get to the being cooked point and my girls and I normally munch them straight from the pod!
Peas are hugely nutritious and far better for us than you would probably think, one cup of peas is only 100 calories and because they are rich in fibre and surprisingly protein so they will help to fill you and help in other ways too!
They contain at least 4 different anti-oxidants and are anti-inflammatory so can help with the signs of ageing and help build our immune systems.
Why not pick some fresh mint and make this delicious soup which you can enjoy hot or cold.
1 Tbsp Olive Oil + small knob butter
1/2 Bunch Spring Onions
1 Potato, cut into small cubes
1 Litre Vegetable or Chicken Stock ( homemade if possible )
900G Frozen Peas or even better freshly picked
Handful of Fresh Mint
Heat the Olive Oil and butter in a heavy based pan until foaming, then add the potato and spring onions. Gently fry until they start to colour.
Add in the stock and bring to the boil for 10 minutes or until potato is soft.
Stir in the pas and bring to the boil again and cook gently. Remove pan from heat and add in the mint leaves.
Cool slightly and then put into a blender and whizz to desired consistency.
That’s it! Just sprinkle on a little more mint and a few sliced Spring Onions or add a pinch of Chilli powder for a little heat.
