Anna’s Fabulous Soup


I have become addicted to sweet potato soup and have it every week.
Here’s my made up recipe:
250 g yellow split peas, soaked for 12 hours (or same quantity of red lentils if you can’t be bothered to soak the split peas)
1.5 litres of veg stock
1 kg sweet potatoes, peeled and cut into chunks
A couple of carrots peeled and chopped (optional)
2 onions, chopped  (red or normal onions – you choose)
3 or more garlic cloves, finely chopped
2 dried chillies, finely chopped or one pinch of chilli flakes
1 tsp each of ground coriander, cumin and paprika
Bunch of fresh coriander
Can of (no added salt or sugar of course) sweet corn (optional but does give flavour and crunch)
If using split peas, rinse and place in a very large saucepan, add the stock, cover, bring to the boil and simmer for approx 25 minutes. Add the rest of the ingredients except the fresh coriander and sweet corn. Continue to simmer for approx 25 minutes until veggies are soft. Blend, stir in coriander and sweet corn. Done. 🙂
If using red lentils, cook the onions and garlic in a little bit of water, add lentils and the rest of the ingredients except fresh coriander and sweet corn. Bring to the boil, cover and simmer for approx 25 minutes until veggies are soft. Blend as above. Job done. 🙂
This is a huge batch so you may want to freeze some but it does keep for a good four days in the fridge. And you can of course bung in whatever you like – make up your own favourite 🙂
