Turkey-Barley Vegetable Soup
Ingredients:
1 Tablespoon Olive Oil or Coconut Oil
1/2 pound Turkey Mince
1 Chopped Onion
1 Sliced Carrot
1 Celery Stalk Chopped
Chicken stock / Chicken Broth
1/2 Cup Pearl Barley
Salt /Pepper to season
Handful Spinach Leaves
Instructions:
1) heat the oil in pan over a medium heat and add the Turkey mince and cook until lightly brown, put to onside
2) Soften the onion, celery, carrot in the remaining oil
3) Return the turkey to the pan and add the chicken stock, season to taste, reduce the heat and cook for 25-30 minutes.
4) Add the Spinach leaves at the end as this allows them to keep their colour
